Vegan Chocolate Protein Pancakes

Serves: 2 People

100g Spelt flour
30g Chocolate protein powder
1 Tbsp baking powder
1 Tbsp chia seeds
240ml Almond milk
Coconut oil, for frying
40g Divine 70% Dark Chocolate with Mint, chopped
Toppings: coconut yoghurt, mixed berries, syrup
Method
Step 1
Whisk together the flour, protein powder, baking powder and chia seeds. Pour in the milk and whisk to a thick and smooth batter. Leave to rest for 5 minutes.
Step 2
Heat a little coconut oil in a non-stick frying pan and add 1 tbsp of batter per pancake. Cook for a few minutes until golden brown, carefully flip and cook on the second side. Make sure they’re cooked through and firm to touch.
Step 3
Serve warm with coconut yoghurt, warm berries, syrup and chopped Divine 70% Dark Chocolate with Mint.
