Vegan Chocolate Protein Pancakes

Tuesday 25th February, Shrove Tuesday aka Pancake Day! Treat yourself to these extra-thick, vegan chocolate pancakes, full of rich chocolate flavor and plant protein! The next time you’re wondering where you’re going to get your protein from, try this chocolate pancakes recipe on for size!

Ingredients

100g Spelt flour
30g Chocolate protein powder
1 Tbsp baking powder
1 Tbsp chia seeds
240ml Almond milk
Coconut oil, for frying
40g Divine 70% Dark Chocolate with Mint, chopped
Toppings: coconut yoghurt, mixed berries, syrup

Method

Step 1

Whisk together the flour, protein powder, baking powder and chia seeds. Pour in the milk and whisk to a thick and smooth batter. Leave to rest for 5 minutes.

Step 2

Heat a little coconut oil in a non-stick frying pan and add 1 tbsp of batter per pancake. Cook for a few minutes until golden brown, carefully flip and cook on the second side. Make sure they’re cooked through and firm to touch.

Step 3

Serve warm with coconut yoghurt, warm berries, syrup and chopped Divine 70% Dark Chocolate with Mint.
