Fudgy, rich and salted dark chocolate cookies decorated as spooky Halloween creatures. These cookies are naturally vegan, gluten-free and so easy to make. They are fun to decorate with little ones this spooky season!

Fudgy Monster Cookies
Prep Time: 20 minutes
Serves: 12 People
Ingredients
70g Pink Himalayan Salted Chocolate, chopped small
25g vegan butter
120g caster sugar
60ml water
80g plain or GF flour
20g cocoa powder
2 tsp cornstarch
½ tsp baking powder
A pinch of salt
Orange and purple sprinkles and edible googly eyes
Method
Step 1
Preheat the oven to 350 F and line 2 baking sheets with parchment paper.
Step 2
Add the sugar and the water to a saucepan and heat until just dissolved.
Step 3
Meanwhile, melt the chocolate and vegan butter together until just melted.
Step 4
Sift the flour, cocoa powder, cornstarch and baking powder into a mixing bowl. Add in the salt.
Step 5
Pour in the sugary mix and the chocolate mix and stir to a thick batter.
Step 6
Working quite quickly, divide the dough into 12, scooping the cookies using an ice cream scoop or tablespoons, onto the trays. Leave some room around each cookie as they’ll spread.
Step 7
Bake for 10-12 minutes until crispy on the edges but soft in the middle.
Step 8
Allow to cool for 10 minutes then add on the eyes and sprinkles and cool fully on a wire rack. Store the cookies in an airtight container for 3-5 days.
