Thick and chewy baked oats with juicy blueberries and melting chunks of chocolate, this brunch dish is easy to make and delicious to serve for friends and family. It is naturally vegan and gluten-free and is great served warm or cold with some yoghurt, extra syrup and melted chocolate.

Banana Blueberry and Chocolate Baked Oats
Prep Time: 10 x minutes + 30 mins cooling
Serves: 6 People
Ingredients
2 ripe bananas
250g oats
2 tbsp chia seeds
3 tbsp maple syrup
1 ½ tsp baking powder
1 tsp cinnamon
A pinch of salt
360ml plant-based milk
150g + 20g blueberries (fresh or frozen)
50g + 20g Dark Chocolate Blueberry Popped Quinoa, broken up
To serve: plant-based yoghurt, extra maple syrup, melted chocolate
Method
Step 1
1. Preheat the oven to 160Fan/180*C and grease an oven-proof dish.2. Mash 1 ½ bananas and place in a mixing bowl. Add in the oats, chia seeds, maple syrup, baking powder, cinnamon and the milk and stir until creamy. Slice the other ½ banana.3. Stir in 150g blueberries and 50g broken up chocolate.4. Pour into the dish, smooth over the top and sprinkle over the remaining banana, 20g blueberries and 20g chocolate. Bake for 30-35 minutes until golden and firm to touch.5. Allow to cool slightly before serving with some plant-based yoghurt, extra syrup and melted chocolate.
