Light and fluffy mini pancakes studded with melting chocolate chips. These pancakes are vegan, gluten-free, healthy and come together in a blender. They take 5 minutes to make and work every time! Serve them stacked high with melted chocolate, fruit and syrup.

Chocolate Chunk Pancakes
Prep Time: 10 minutes
Serves: 2 People
Ingredients
1 cup oats
1 tsp baking powder
½ tsp cinnamon
Pinch of salt
1 banana
1 cup plant-based milk
1 tsp lemon juice
60g or ⅓ cup Divine 85% Dark Chocolate bar, chopped into chunks
To serve: melted chocolate, yogurt, syrup, fruit, extra chocolate
Method
Step 1
Place all of the pancake ingredients expect the chocolate into a food processor or blender and blend until thick and creamy. Pour into a bowl and leave to rest for 10 minutes. Stir in the chocolate chunks.
Step 2
Heat a large non-stick frying pan with a little oil and drop 1 large tbsp of batter into the hot pan per pancake. Cook over a high heat until bubbles form, about 2 minutes, then flip and cook on the other side for 2 minutes or until golden. Repeat until all the batter has been used.
Step 3
Serve warm with melted chocolate, yogurt, syrup, some fruit and squares of chocolate.
