Simple and delicious vegan sugar cookies decorated with rich Dark 85% Chocolate and icing sugar mummy faces. Add on some edible sugar googly eyes for a really Halloween treat. They are naturally vegan and great to make with children, too.

Chocolate Covered Mummy Sugar Cookies
Prep Time: 20 x minutes + cooling
Serves: 18 People
Ingredients
100g vegan butter or margarine
100g Fairtrade caster or light brown sugar (or half and half)
1 tsp Fairtrade vanilla essence
2 tbsp plant-based milk
250g plain flour
½ tsp baking powder
½ tsp bicarbonate of soda
A pinch of salt
70g Fairtrade Divine Dark 85% Chocolate
70g icing sugar
2-3 tsp water
Sugar edible eyes or sprinkles
Method
Step 1
1. Preheat the oven to 160Fan/180*C and line a cookie sheet with parchment paper.2. Cream together the butter/margarine and sugar until fluffy and creamy. Stir in the vanilla essence and plant-based milk.3. Add in the flour, bicarbonate of soda and the salt and stir to form a ball of dough. Bring it together with your hands.4. Transfer the dough to a surface covered in parchment paper and roll out to about 1cm thickness. Use a cookie cutter to cut out shapes and transfer to the cookie sheet (use a pallet knife to loosen them).5. Bake for 10 minutes until golden and allow to cool fully on the tray on a wire rack.6. Melt the chocolate and dip each cookie in to coat the cookies evenly. Allow to cool again before decorating with icing sugar and the sugar edible eyes.
